Aroma
Great depth with rich berry fruit complemented by hints of licorice, dark chocolate, violets and cedary oak.
Palate
A well balanced palate which is smooth and richly textured with fine grained tannins. Comprises of rich berry fruit flavours and coffee mocca with a long lingering finish.
Winemaking
Selected parcels were gently crushed and transferred to 1 and 2 tonne open pots. Regularly hand plugging of the cap, with fermentation on skins for 13 days. The wine was matured in new and year old small french oak casks for 20 months. The wine was only lightly filtered to maintain fruit intensity, a may throw a natural crust on the inside of the bottle. Blended with 5% Cabernet Franc and 5% Merlot to round the palate and enhance aromas.
Viticulture
A great 2004 vintage for Cabernet Sauvignon, which started cool and finished with a long warm autumn. An extended ripening period on Hanging Cane trellising system led to a harvest in late April of a single parcel of dry grown fruit.

Enjoy now or cellar up to 2012, place wine in a decanter if possible before serving.
