Label: ‘Petronio By Maximilian’ – Dixons Creek Vineyard Pinot Grigio 2021


Vineyard: Dixons Creek Estate Vineyard located in Dixons Creek, re-planted in  it has a Northern exposure. The vineyard sits just above the valley floor, is subject to the typical Yarra Valley of cool nights and warm sunny days during the growing season.


Grape Variety: 100% Pinot Grigio


Soil Composition: Sandy with clay loams


Training System: Vertical Shoot Position (VSP)


Winemaking: Whole bunches straight into the press. Gentle pressing took place with the free run juice separated. Cold settled and inoculated with a yeast culture in temperature controlled stainless steel tank where primary fermentation took place for over 20 days.


Maturation: In stainless steel


Tasting Notes: Primary fruit flavors of lime, lemon, pear, white nectarine, and apple. Some faint honeyed notes and finishes with a saline-like minerality.
